will 285/75/16 look sensible on a sahara or do i need as minimum of 33 1250 15?

Almost the same diameter, just a bit narrower. Use wheels with extra offset and they will fill the arches and keep or improve your lock but may put a bit more load on the wheel bearings - its just a trade off one against the other. Obviously bigger diameter wheels give you better axle clearance, but only by half of the total diameter difference.

I saw a Defender the other day with 285/65/18 AT's on the other day, the large offset alloys from Silverline based in Warwick, that looked quite good and I was wondering if there was much of a weight saving by going up in rim diameter and reducing the amount of rubber.

I'll post a photo if I can find it.
